If you are looking for a vegetable to add to your diet, broccoli may be your best bet. It is rich in Vitamin K and C and also has 2.5 grams of protein per cup. Also, its total carb count is low only 3.5 grams in a cup.

Here is a diabetes-friendly broccoli recipe – a wonderful way to get your vegetables!

Roasted Broccoli with Garlic Tahini Sauce*

Ingredients:

1 1/2 lbs broccoli florets (I’m changing these instructions a bit because I don’t like the stumps or stalks of broccoli. If you do, peel the stalks then slicked them thinly).

1 Tbsp olive oil

1/2 tsp  ground pepper

2 Tbsp lemon juice

1 Tbsp lemon juice

1 Tbsp honey

1 Tbsp reduced sodium soy sauce

2 cloves garlic, minced

1/2 tsp ground coriander

1/3 cup thinly sliced scallions

1/3 cup coarsely chopped cilantro

1 tsp toasted sesame seeds

Instructions:

  1. This is going to be in a hot oven 500 degrees so you need to put the rack on the bottom third of your oven.
  2. Toss broccoli and olive oil with pepper.
  3. Place the broccoli on a baking sheet with a rim. Roast them for 9 to 10 minutes
  4. Whisk together the tahini, lemon juice, honey, soy sauce, garlic and coriander. Add the broccoli, scallions and cilantro.
  5. Coat them thoroughly. Add sesame seeds.

Serves 4 people.

20 grams of Carbs (5 g fiber, 8 g sugars)

9 g Fat

7 g Protein

205 mg Sodium
