Looking for some delicious and cool recipes for the summer? Try these two diabetes-friendly recipes from Diabetic Living[1].

Recipes:

Berry-Mint Kefir Smoothies

1 cup low fat plain kefir
1 cup frozen mixed berries
1/4 cup orange juice
1-2 Tbsp. fresh mint
1Tbsp honey

Combine kefir, berries, juice, mint to taste and honey in a blender
Smoothies can keep for a day in the refrigerator; 3 months in the freezer

If you are unfamiliar with kefir, it is a drinkable yogurt that can be found in the dairy section of your grocery store.

Cobb Salad Sandwich

1 ripe avocado, thinly sliced
1 tsp lemon juice
1/4 cup nonfat plain Greek yogurt
1 tsp dry ranch salad dressing mix
8 slices whole wheat bread
8 oz sliced cooked chicken breast
4 very thin slices Colby-Jack cheese 2 oz total
4 leaves romaine lettuce
1 medium tomato, thinly sliced
4 slices low sodium turkey bacon crisp cooked and halved

Lightly drizzle avocado slices with lemon juice
Mix yogurt and dressing mix in a small bowl
Top 4 slices f bread with chicken cheese lettuce tomato turkey bacon and avocado Spread the yogurt mixture on the remaining bread slices and se one on each sandwich

Serving size: 1 sandwich
